Yellowfin, light tuna or albacore (trade names) or yellowfin tuna (Thunnus albacares) is a type of tuna found in the open waters of tropical and subtropical seas around the world, although absent from the Mediterranean. It is an epipelagic fish that inhabits the first 100 meters of the water column. Its size can reach 239 cm in length and 200 kg in weight. It is also known by its Hawaiian name "there". Yellowfin tuna has become an effective substitute for bluefin tuna, whose populations have been severely reduced. It is a fusiform-bodied fish, more stylized than other tunas. Both its head and eyes are small, and the second dorsal and anal fins are the longest of all tunas; they reach greater size at maturity. It has a swimming bladder. There are 26 to 35 denticles in the first gill arch. Its pectoral fins usually exceed the birth of the second dorsal fin, but do not go beyond the end of its base.
In the dorsal area it has blue and yellow side bands. In the inferior and ventral zone it is of silver color, presenting chains of vertical lines alternated with points. The second dorsal and anal fins are yellow.
The pinnulas are lemon yellow with black edges. These yellow touches give the species its name. The second dorsal and anal fins are so brightly yellow that they give their common name. They can be very long in mature specimens, such as pectoral fins.
The yellow fin tuna is among the larger tuna species, reaching weights of over 180 kg (400 lb), but is significantly smaller than the Atlantic and Pacific blue fin tunas, which can reach over 450 kg (990 lb), and slightly smaller than the bigeye tuna and the southern blue fin tuna. The second dorsal fin and the anal fin, as well as the finlets between those fins and the tail, are bright yellow, giving this fish its common name. The second dorsal and anal fins can be very long in mature specimens, reaching almost as far back as the tail and giving the appearance of sickles or scimitars. The pectoral fins are also longer than the related bluefin tuna, but not as long as those of the albacore. The main body is a very dark metallic blue, changing to silver on the belly, which has about 20 vertical lines.
Tuna loins are ready to slice into steaks or cut into sushi/sashimi portions. They are available in sushi grade or the more affordable grill grade. Either grade can be cooked, but sushi grade loins have been selected for premium texture, appearance, and flavour when served raw or seared. These loins are prepared skinless, boneless and blood line removed.
Fresh wild caught Yellowfin Tuna is perfect on a salad, served seared or grilled. It is a popular fish served raw as sashimi or sushi, and becomes firm and moist when cooked. Yellowfin Tuna is best paired with a moderately full white wine which brings out its quality aromatics.
